how do you take off left over wax or polish?

Most polish residue can be taken off with some quick detailer ( or Dawn detergent & water ) and a microfiber towel. This way will leave your wax/sealant intact, if there's any there to begin with.
FOR HARDCORE STUFF; You can use some 3M Adhesive & Wax Remover for really stubborn residues, it's sold just about everywhere, even Wal-Mart has it by me. Prepsol is another product sold at auto body / auto paint suppliers. Auto Zone sells a product by Kleen-Strip called Prep-All as well. They all do the same thing for the same purposes. Won't hurt your paint, but will strip off wax.
