This is my old car, but since i've been reading this forum i thought i'd share. I did this before i sold it to impress the buyers. LOL
My process was simple
1) COLD ENGINE!! Metal Fatigue need not apply.
2) Tape ziplock bags around air intakes and oil dip sticks
3) Rinse lightly with hose
4) Generous application of Simple Green and scrub with lite brush
5) Rinse...again lightly, not firehose style, but rinse good because i hear simple green can be corrisive
6) Drive around town and get the engine fully warmed. This evaporates the water from all the nooks and crannies so you don't have any standing pockets to rust/corrode, etc..
7) Lexol on all plastics , rubber, and hoses
8) done!

I've been cleaning my engine bays with CD2 Engine Detail Spray or Black Magic Engine Detail/Degreaser. It's almost a hands free cleaning.
You just spray it on the engine bay (after covering up whatever you think need to cover up) and it'll foam out. Let it sit for 5 minutes and rinse it with water.

I do my 16 year old MR2 with Orange Blast and follow with CD/2 Engine Detailer. I warm the engine first an then spray the Orange Blast on it. Let it set for a few minutes and gently rinse it off qith a hose and not a high-pressure washer. Remember that all the grease, oil and road gunk will wind up on your driveway so you might want to park on the grass or a tarp.
After the rinse I take my compressor and blow off the engine. I also use an couple old towels to soak up any pockets of standing water. I start the engine and let it warm for a few minutes to aid in drying. Once dry I then spray with CD/2. This is great stuff but I understand it has been dropped after it was bought up by Turtle Wax. I have a case left. It's an acrylic based product that dries hard and non-oily so the engine stays clean and doesn't attract dust and dirt. Grab some if you can still find it.
Here is the final result.
