The woods that are used in today's automobiles are clearcoated with a polyurethane paint similar to what is on the car, so you can use a cleaner wax product, a fine polish or some mild soap such as car wash soap. Murphy's Oil Soap will also work.
Dish soap is highly alkaline, and while it won't really hurt the clear coating, it might (over time) dull it with continued use. If you do use it, dilute it well with water. You should wax the finish afterward.

I tried that but thought it made the wood too slippery on the steering wheel wood. Maybe that's just an issue in the dry cold north climate. I now clean all my wood parts with a microfiber towel dampened with Quik Interior Detailer.
