Protecting headlights?
I ordered and received a set of new headlights for my 2GS, to replace the old, yellowing ones.
I'm wondering, is there anything I can do to protect the new set? I think saw some website a few years back that makes some sort of film overlays. Are they worth it, and are they easy to install?
Also, are there any particular things to avoid to keep headlights fresh and new? Like avoiding certain carwashes, etc?

yes. Buy some lamin-x
They come precut for most applications [check their website for the 2GS application and if they make one]
If not buy the square sheets, apply, let it dry and cut out around the edge.
Lamin-x is nice as it is a little thicker than generic vinyl's so you know it can take a beating from rocks/sand & such.

You can go with the above method and it should work good. The other alternative is using a sealant on them just like you would your paint. The Blackfire Wet Diamond with Polycharger and the Optimum (OPT) Opti-Seal are two products I use to protect headlights, tail lights, glass, wheels and paint/clear coat.

I went to my normal clear bra guy when I got my sportdesign lights and had them put 3M material on 'em. Don't recall the cost though

As for new/old headlights if you are not going to get a protective film over them I would just put a good UV resistant sealant on them every month or so to make them clear as long as possible.
