I don't think steam cleaning leather is a good idea. Leather tends to get stiff after it gets wet. Haven't you ever gotten a pair of leather shoes totally soaked?
Go ahead and steam clean the carpets, but get a good leather cleaner for the seats.

You can steam clean car leather for sure. Thats the point of steam cleaning, it doesnt soak the fabric being cleaned. You wouldnt use a carpet style "steam cleaner/extractor", you would use a wand style steam cleaner.
Automotive leather has a plastic top coat.

I never tried to clean my leather seat with water. I just do vacuum and carefully remove dirt debris from crevices, a spritz of the mixture of vinegar and olive oil in the spray bottle, leave it for 5 minutes and wipe. For grease stinks, I use baking soda.

After watching some interior detail videos on YouTube I bought a Steam Cleaner
Good thread on steam cleaning: Steam Cleaning leather
I have a 2008 Highlander I use as my test car for everything, especially for learning compound polishing when I bought a DeWalt variable speed polisher
I tried out the steam cleaner on the seats and it was amazing how much dirt it takes off in minutes
sprayed a leather cleaner on first then steamed
Before on the left, after on the right., can't believe they were this dirty, scrubbing with cleaner and cloth did almost nothing, why I had to invest in a steam cleaner .
After, not perfect but got a lot out, I need to hit it again with the steamer soon
After I used a leather conditioner to keep them soft.
Has also been a great test vehicle for my Polisher, haven't tried it on my LX yet but getting more confident in my buffer skills
