It took 30 minutes to sign the paperwork. OK so they eliminated a lot of the paper and she signed on a tablet, but why does it have to take so long?

I would rather just deal with manufacturer directly, go on a website, spec out what I want, put a deposit down, do the financing and paperwork from my laptop or phone. I'll even pay more money for the convenience
While I agree with at least some of your wishes here, I don't necessarily see those 4 hours you spent at the dealership as a waste. You and your daughter came home with a very nice little Bolt EUV......IMO, currently one of the best, if not THE best deal for an EV in the American market. It would be my first-choice, hands-down, if I myself were in the market for an EV.

sorry, but 4 hours in a dealership is a total waste, no matter how nice a car you come home with or what kind of bonding time you have. I was at the dealer for 3 hours when I helped my MIL buy a car - they had absolutely no respect for our time. The last 2 cars I bought, I was there about 45 minutes, and that includes the salesman showing the features of the car (which the salesman didn't do in the 3 hours I was at the dealer with my MIL).

Well my friend, you may not see it as a waste of time, but had my daughter wanted a Tesla (she didn't), I would have only lost about 10 minutes ordering it while sitting at my computer at work. I literally had to put work to the side and take half a day off. As far as it being the best deal hands down, that may be the case for someone like my daughter who is a recent university graduate and needed a commuter for work, but try travelling long distances with a Bolt. It takes 1 hour to charge from 10 percent to 80 percent due to it only supporting 55 kW chargers. Yes it's a great value as a starter EV, but for any type of travelling, no so much. But we can talk about that in the Bolt thread

The Techs who still keep their jobs (or newly-hired ones to replace those who retire), that way, won't lose any money in salary/compensation, and the dealerships will same money by having fewer of them on the payroll.

Having said that, however, I wish your M-B Tech colleague a long and happy retirement. After 30 years, he's probably earned it. I retired from Federal service myself after almost 33 years...burnout and other factors were getting to me.
There are two different people we're talking about here. Theres the tech, who works on the car, and then there is the service advisor who builds the relationship with the customer and handles selling the service to the customer. I am talking about service advisors, not techs. There is still a lot of potential out there for techs who are experienced with EVs, as you said there will be less of them but they will need more and different training and may be even more highly paid. Plus, there will be lots of ICE cars running around that still need to be repaired.

The guy I am talking about is a service advisor, not a tech. The outlook for him and others like him is very different. Those people are salespeople who work on commission. They get a cut of the service they sell you. When there is much less service to sell you, there is much less money to be made. They already make much less than they used to make, and this is going to be the nail in the coffin. You'll have automated service centers where there is a computer terminal or something like that and that profession will just disappear.

Its a huge waste, 4 hours in a dealership. He could have come home with the same bolt after 45 minutes, or even better it could have just been delivered to his home while he relaxed with his family.

I LOVE cars, and even for me 4 hours sitting around a dealership is an awful way to spend 4 hours.

Here Is How Some Dealers Are Hiding Their Markups Over MSRP

Over $5,000 in "accessories" is not really different than several thousand over MSRP
