Yeah, you know how completely bad-*** a built up 427 twin turbo in a RX-7 would be? come on! Go for it

I know.... I also know I would be on the hook for $60-$70k without labor!

I think this alone makes a good case for the 427. You've been so used to turbos, when was the last time you've had a long, flat torque band like the 7L's gonna make? Be different, go give the C5-R block a chance. Oh, and have you began gutting the RX7 out yet?
