I keep my Casio Exilim on me whenever possible, and have taking pictures going down the highway more than once. It's not the best camera, but it's pocket sized, so I don't mind having it on me, and I love getting pictures of interesting things.

That can go either way. Sure it's nice to have people admire your car enough to want to take a pic but then you realize that they probably got your license plate on there as well and some people aren't thoughtful enough to blur out the plate number if they post the pic somewhere.

I keep my Fuji digicam in the glovebox just in case. You never know when you need to take a photo for legal reasons like being involved in an accident or being unjustly ticketed when there is not a "no parking" sign for miles. Every now and then I'll pull it out if I see some BS on the street that I just gotta show my friends. For example...

I get people taking pics of my Lexus down here and especially my friend's RX-7, both very rare south of the border.
I usually don't have a problem with it, but one recent example involved a car getting too close and nearly bumping into me. Guy yelled to me (translated into English), "Hey, I am just trying to take a picture of your car."
