i have a 350z as well. i was planning on buying a s2k but they are so slow. they might handle nicely but my 350z handles pretty well. its all on suspension set up and tires. nice set of coilovers, sway bars, poly bushings and a good set of tires and your set.
also if you wanna tear it up at the track, EVO's are beast on the track. nothing is better than AWD

Here. Road and Track just did an S2000 CR - Nismo 350Z comparison. While these, of course, are specialized, limited-production models, nevertheless they also give a good indication of what the base models are like.

If the track you are going to use has lots of sharp curves, you will probably want the S2000, with its greater agility. If the track has long straights, the 350Z's greater HP and torque shows its stuff.

Track car under $25k? S2000, Miata, or E36 M3. Get a car that's light, nimble, and balanced - you'll improve quickly and have more fun driving it.
But if you really want to have fun, how about a Vtech Mini? http://superfastminis.com/
I'd be giggling like a fool driving one of those on a track.
