It's all head and eyes, and not as hard as you might think. We had to do the same stuff for MSF Instructor school, in fact, we did a complete figure 8 inside a standard parking stall (I did this on my '84 FJ1100). If you've been practicing at all, it's pretty easy. It just looks impressive. One of our Sacramento Instructors did all the exercises routinely on his full dress Gold Wing.
The Japanese cop sticking his leg out on the immediate turn from a stop looks amateur. There's no need for this. Just lean the bike and apply throttle - it works great and it looks really bad ***. After the first time you do it, it's dead simple.
And dragging stuff in this kind of competition is a serious no-no.
I've always been a lot more impressed by Trials riders.
