After being officially rated at 662 hp and 639 lb-ft, the gt500 got a little more intriguing. All for $55k while getting 24 mpg on the highway. Interested to see if it can put all that powa to the ground and run with he GTR on the highway, the drag strip, and the track.

I'm not seriously in the market now personally, but I'm playing round with ideas...unlike you my limit is half of yours at 50K MAX and that's not including a trade in of one of my cars... so far the perfect car that I have come across is a 2008 z06; I'm on the larger side and I found the seats to be fantastic for road use, (but like mentioned before probably not good for track use), and the updated Carbon fiber interior was decent...nothing too horrible.
If you are willing to spend that much money I would go for new definitely personally. The new Viper seems to be really nice but it is speculated around 135k I think for the GTS version. The Shelby seems really nice, but again it's still a mustang that is at the end of it's generation run. Honestly, since you are already a p-car man the GTR would be a great decision I think...2013's are right below 100k and still seem like a bargain for what they are capable of. That would be my number 1 car if I were in your position. The only way I would go a different route is if I wanted more of a purist driving car that came with RWD and a stick.
