Because people are idiots, and they're not pro videographers. They barely understand their smartphones so they're conditioned to use the video aspect of the phone the same way they use it in normal operations vertical vs sideways. Generally the phone's screen is a widescreen and its lens is engineered to work that way, strange. I'm sure there is some smartphone engineer right now who's hacking away at a swivel lens that detects how the phone is oriented and will show a vertical pic/video to the user and remind them to tilt sideways to get the widescreen.
