I want a maroon "Caddy red" Escalade. With the reddish leather seats. And the column shifter.

Depends on the vehicle in question. BMW made the e-shifter popular and no mechanical connection exists...on the opposite end, toyota still have products that still do the mechanical linkage even though it might seem as electronic.
Regardless of linkage, manual (gated) is ideal while the center console for auto is my preference. Buttons while appealing to some, just feel weird still (tested it on the mdx)

Button shifters free up some console space, but there is just something aesthetically pleasing about traditional center console shifters, even if they are electronic.

like how people blindly still stick to analog speedometers when i can just display a number on the screen. Or even worse when you have full LCD gauges but then end up making it still look like old analog gauges

I prefer analog speedometers, even within a LCD setup. But thats the great thing about these LCD setups, you can have multiple display options. I don't believe "cars MUST have analog gauges" lol
