The only place that I think you can "pig out" without costing an arm+leg is any buffet-any Chinese Buffet or Hometown Buffet.
I like this one-Asia Buffet off of La Palma in Buena Park. Lots of seafood, dinner is somewhat pricey.

People forget that they have an all-you-can-eat table service.
For $30 per person (I think), you get to choose two appetizers, two salads, two pastas, two main (meat) dishes, and two desserts from a special menu. It's served family style, but if you want a refill of anything, they'll do it (hence the all-you-can-eat). Special items cost extra, but still unlimited refills. And you can take the leftovers to go!!!
I think you need a minimum of four people, but if you're charming, you can convince the server to do the family style meal for two people only. I've done it, and I gorged myself on a ten-course meal with my ex-girlfriend.
The one I go to is in Costa Mesa right by South Coast Plaza.

a few come to mind:
agora churrascaria in irvine.
brazillian bbq. very pricey, though ($50/person for dinner).
joe's sushi on beach between la habra and whittier.
all-you-can-eat, and they make it on the spot. very fresh too, unlike a lot of other places. lots of specialties. awesome staff (where else are the sushi chefs gonna drink and joke around w/ you?).
any korean bbq restaurant.
the better ones are the ones that use charcoal grills instead of gas.
the hat.
pastrami sandwich. chili cheese fries. 'nuf said.
new capital, diamond plaza.
go after 9:30 for their late night menu. restaurant-style chinese food for cheap.
alberto's, and any variations of it.
my personal favorite is BCD tofu house.
nothing like a late night tofu run. no initial D pun intended.

prime rib @ houston is a good runner up. make sure you get the baked potato w/ EVERYTHING.
are you serious? the food at guppy house (and i'm talking about both cerritos AND hacienda heights locations) isn't that great. what's worse is that the so-so food is overpriced.
i'd rather skip across colima to boston cafe. much better food for the same price.

I agree with everyone who said the Hat, it is delicious, but don't order the pastrami AND the chilli chees fries....it will kill you.
In addition Philippes on Alameda and Ord in downtown LA (near China Town)has the best french dips, very old school.
Then on to Ghetto BBQ at Woody's on the corner of LaBrea and Market, outstanding
