Would the jump from a 205/65-15 to a 225/60-15 really improve handling and road manners?
Maybe even a 245/55-15?

Because the dude I bought my '97 from left the OE tires on them, the fool! nearly 75,000 miles and OLD OLD OLD tires.

handling? um.. not really.. anything fatter than a 215/60/15 will just look stupid because of the rediculous width youre trying to put on a 6" wheel

You can't stuff a 245 tire on a 6" wheel. Nobody is going to do it for you. Hell noone makes that size widely available in the first place!
Just buy some 16 * 7 w' 215/55 R16 / 225/55 R16's, or 17 * 7.5" w' 225/50 R17, OR 235/45 R17 that are fairly light weight rims.
Road manner is going to decrease the wider & shorter the tire is. Keep in mind 205's are also going to turn & have more response than larger tires will. You'd outrun someone on wide 245+'s at a drag strip from less resistance & weight (there's not enough wheelspin to need more traction), while running circles around them on an auto course from quicker response & less weight.
If you want better handling & response, I think you have a slightly wrong idea.
What you need is a descent set of replacement tires & to kill the lame stock suspension. Rear sway bar, stiffer springs & good struts.

FYI run the pressure Toyota of Europe recommends on it's Camry's that exceed 90mph, or sustain a high rate of speed. 38psi. It'll sharpen the responce some.
If you're drag racing, most Solara/Camry owners have the best traction around 22-25psi. Take an air pump to the track so you can re-inflate them. It's dangerous to drive on such low pressure.
