Correct Tire size - 19x8.5 wheels
What tire size is best for 19" wheels x 8.5 width?
Car: 2004 ES330
Springs: Tanabe NF210
Tirerack says to use 225/40-19, but I want to make sure I dont have the stretched look. I got the recommended tire size on my 20" GT1s and it didn't appear to have enough tire to protect the lip.

I guess 1010tires.com is broken on your computer. Due to this inconvenience i did it for you:

So... we can conclude that either one of those listed will work on the 19" rims
So, moving onto the 'stretched' tire look, get the biggest ones possible, the 245 would be my suggestion based upon you want as much coverage as possible for the rims' lips.
As long as you are within the 3% difference you are good to go, so that your speedo is not very inaccurate. My current winter tires are not OEM spec either i found a better deal on a size that was similar and it falls within the 3% rule so all is well.
