First off, I'm no expert, but I had to deal with this same issue with my 98. I had 245/40/18 and was not lowered and with 15mm rear spacers, but rubbed the fender on big dips and bumps. My buddy on here, CamberSC, the fitment expert said, those tires are too big. Now I have 225/40/18, lowered on coils too and I am not rubbing, but I do have 8.5 inch width rims. Also bear in mind, that if you go to a smaller sidewall profile, your going to change the overall diameter of the tire and throw off your speedometer. Also, the smaller sidewall profile will make the ride more uncomfortable and your risking bending your rim on potholes. Just a suggestion, since your rim width is 7.5 inches, I would go 215/40/18. This will give you the almost same wheel diameter as a stock setup, better ride comfort and slight stretch to give good fender clearance, so you dont rub. Again, just a suggestion, and I'm no expert, learning from my trials and errors.

225/40/18 Sits flush on an 8" wide rim.
It will be almost flush on the 7.5" as well.
Keep in mind that tire sizes are subjective since some out of the factory do have a little stretch, some have none, etc. It depends on the manufacturer.
With that said, 225/40/18 provides a decent ride, then again with the car dumped like yours i have a feeling you won't be too worried about ride quality.
