I think I will go with Akebono pads and Centric rotors on my 2005 ES330. In another thread someone mentioned he put 125 and carbon type rotor so as always when there are multiple product lines I am a bit confused.
Is this a good combination, and best from both brands or I should consider some other option?

A nice thing to do when putting in new rotors is to paint them with high-temp gray or silver paint. Over time, the hat and edges will not rust and discolor, and your wheel hubs should not fuse to the rotor hat as readily. No need to tape off the mating area, a few brief stops will burn the paint away harmlessly. You do not need the pricey caliper paint; high temp grill paint works great.

I also like to strip or wire wheel the caliper pins to clean metal, clean out the bores, and use new silicone grease in them. Replace the pin boots if they have any defects. This prevents possible caliper binding and pad sticking down the road. I was unaware, until this board pointed it out recently, that these cars in particular are prone to pin sticking in most climates/road conditions (ours here are mild).

I like to use anti-seize on the hub surfaces that come in contact with the rotor. Used sparingly, this will also help with future rotor removal.
