I picked up a 2nd generation ES that has been sitting for about 3 years. My plans are to do an oil change (full synthetic) but should I be okay with just adding gas or do I need to empty the tank and refill?

How much fuel is in the tank? If there is anything over 1/4 I'd get it out of there after 3 years gasoline like to turn to varnish.

Indeed. If there is over a quarter tank, you should empty the tank. You'll need to prepare yourself for normal maintenance on the car too. Belts, plugs, wires, etc. Preventative maintenance items should be addressed as vehicles that sit can produce issues depending on the elements in which they're stored. If it was indoors, probably okay. In 3 feet of snow half the year and blazing hot summers? Think about freshening the car up a bit.
