i've heard you can't bleed and flush the brake fluid on cars with ABS yourself, you have to take it to the dealer or a mechanic that knows how to do it. is this true?

From a consumer standpoint, that's correct. The brake fluid cannot be exposed to outside air at all, otherwise the fluid will become tainted with air bubbles and dust.

The brake fluid also picks up moisture when left open and that's the main reason for contamination. This moisture will ruin the internal parts of your braking system at a much faster rate, especially the ABS. This brake service should be left to the experts that have the proper flushing/bleeding equipment.
