I知 going to drain my transmission fluid and flush the other fluids pretty soon. I知 just wondering approximately how much of each I値l need to do the job?

If only draining the transmission, a bit less than a gallon.
PS system is about one more quart, the leftover from the at gallon will cover any extra.
For coolant, it will take 5 to 6 quarts depending upon the ratio you mix. If premix, two gallons and maybe a bit more dH2O to top off.

Get two more, you need at least one for the PS system.
Jet.com had Aisin TIV for $4.15/qt last I looked. very good price and the right fluid; you cannot beat that price with anything else, really, and that is the best fluid to use I have finally realized. Adding some Lubegard red is also good IMO.
Last time I did my transmission I used a pump via the tube. I got 3.3qts - and that method leaves 1/2qt or so still in the pan. If you drain it, you will get something like 3.7+/- quarts out. When I did a "proper" drain/fill in the past, it was always a little shy of a full gallon.

So for power steering, only 1-2 quarts? 2 to be on the safe side?
I got 2 gallons of the Lexus premix coolant (no water needed). Should I get one more to be on the safe side? Not sure if they sell it by the quart unfortunately.

2 gallons should be fine. The sysem is 9.x IIRC, but there is fluid in the heater core and hoses you won’t be able to drain. If you are a wee bit short, having a $.89 gallon of dH2O from the grocery or ability to run get one, is enough.
For the PS, if you are flushing it, having more than a quart is needed. Jacking and working the wheel unassisted is tedious, so draining and refilling the reservoir twice is 20% of the work for 90% of the benefit and most do it that way. The ps system on these cars is a bit stressed and I think adding something like an ounce or two of Lubegard red or a bottle of their dedicated PS fluid is smart.

Engine oil 5 qts
drain n fill coolant 1.5 gal (mixed)
Power steering unless you have a way to do a complete swap. otherwise you get very little replaced.
brake fluid 2 qts
