I am looking for steel wheels, but need to know the size/offset
I have the 17" tires on my ES350. The Toyota dealer ensured they were the right fit. Check this website out to find offset and tire sizes for your application:

How do you find the steel wheels in the winter? Does the weight and durability provide a more planted feel to the road?

Was thinking of getting 16" rims/tires, for a softer ride and better cutting power through deep snow.

The ES350 is just a pimped out Toyota Camry. Toyota doesn't recommend alloy wheels for winter use: https://www.toyota.ca/toyota/en/conn...driving-safety
They are durable, cheap to replace, and don't look that bad when your car is all covered in salt anyway. My 17" tires perform well in winter and do not have much of a difference in feel compared to my summer all-seasons. I think if you went to a 16" tire you might start to feel a difference in handling as there is more sidewall. I don't think a 16" tire would be any better at cutting through the snow as they are not narrower. You just have more sidewall to protect you from potholes.
