Are you due for maintenance? I believe you would get a quick message on the display, but not sure all 6th gen ES's show the same thing. What year?

Could it be a door-open / sunroof-open chime? If you open the driver's door after switching off the ignition, and a window or sunroof is open, there will be a chime and a message in central instrument cluster (directly in front of the driver).
Could it be an ignition-on chime? If you do not switch off the engine (ignition) but open the door to get out, there will be a chime.
Have you checked the owner's manual?

Mind seems to chime as well if I just pull into say a parking spot at work and then put it in park and at the exact same milisecond push the engine off button. Seems to chime then , but I just close the door and lock it. It's almost like it thinks you switched the car off before it actually went into park on the shifter (and maybe I do by a hundredth of a second) . It's the same kind of chime you get if the lights are left on.

I'd let the dealer find and correct it as it is a new car. Thee are a ton of new electronic options/settings in this 2018 model and it could literally take weeks to learn about all of them via the owners manual and trial and error. That's why they have a technology guru on site. It is not a bad idea to a meet with that tech guru anyway as he can offer tons of suggestions on how to best customize these options to better suit your needs and get you familiar with what is available.

Weird, are there any accompanying lights on the dash to suggest? I know my old car (not lexus), the reverse sensors were on their way out and would randomly stay on, here and there...
but for a new car??? just take it back.

The random chiming in our new ES was not the fault of the car. It was corrected by turning off a notification on our Galaxy cell phone.
Just an fyi..in case anyone else has a problem!

I'm confused. A setting on your phone was resulting in your car's alerting system going off? How? What setting would do this?
