Owner's manual says I can use 5w30 in A25-FKS in Australia

Toyota also specified thicker oil in Australia than here for a 2010 Toyota in our family. I think it's as simple as the fact that Australia is a hotter place.

I am going with 5w30 to have less wear on the engine.

The video from Project Farm is up there.
0w16 being too thin, provides less protection and is demonstrated in the video.
You can make your own decision.
Use the oil that owner's manual recommends.
My owner's manual is not against using 5w30 so I will use that.

Regarding the sticker on the engine bay, I found this car listed on a US based car sales website.
2022 es250 AWD.
Notice the 0w16 sticker whereas the AU version does not have this sticker as I posted before.

SAE OW-16 is filled into your Lexus vehicle at manufacturing.

For me this is enough.

You are right. But it does not state that we must keep on using 0w16.
US models however are different story.
I had cars that said to use 0w20 and only 0w20 and no other oil.
I had cars that said to use 5w30 and only 5w30 and no other oil.
I have a Mazda cx30 2024, it can too use several other viscosities...
Here is a speculation and my opinion only.
0w16 is filled at the factory because the car is produced for "global" market. They don't know where the car will go.
To make the manufacturing easy, they selected 0w16 as it is required by the US and it can work for other climates too.
They don't want to be filling the same car with different oils for different regions which would mean extra time+money+effort for Lexus.
Anyways, I will be here for a long time & if the engine blows, you will know about it
I do appreciate your concerns but do not blame me, blame Lexus for these variations in owner's manual (US vs AU).
United Arab Emirates has the same issue BTW and Mexico... They can use the other viscosities.

They know about every car where it will go - NA, US, EU, AUS...
They put that oil because running it they can guarantee the decleared fuel consumption and the engine performance.

I don't see anywhere in my owner's manual using 5w30 will decrease my engine performance.
It does mention using 0w16 is the best choice for fuel economy but at what cost?
0w16 or 0w20 appears to wear engine more as explained in Project Farm's video.
