Does anyone elses auto dimming side mirrors not work?

That isn't correct.
The Lexus window disclosure sheet for my 2019 ES 350 Ultra Luxury has listed under "STANDARD FEATURES" "* Electrochromic Heated Outside Mirrors". Also, the 2019 Lexus ES 350 Owner's Manual states on page 116 [pdf version] under the "Outside rear view mirrors" section:
Starting with the 2022 model year the manual's text has been changed to reflect ONLY the driver’s side outside rear view mirror has the auto anti-glare function:

My 2023 ES 300H does not have auto dimming side mirrors. It may be that the base models don't have them, although I haven't seen any reference to them on any 2023 model when looking at the feature list on line or by looking at a 2023 ES 300H UL window sticker. The owners manual says the same thing as the 2022 manual (i.e. driver side)

Yes, upon further investigation it seems the Driver's side autodims and the passenger does not...which I think is smart and I kind of like.
NOTE: The rearview is the mirror inside the car. The sideviews are the mirrors outside the car.

On both cars both outside mirrors dim.

Both outside side mirrors on my ES300h automatically dims when lights hits the rear view mirror. When there's a lot of lights coming from many cars behind me (especially trucks), all 3 mirror gets so dark that I can barely see the brand of the cars that are driving behind me (you can only see the 2 front lights from cars).

You can make the same argument about many features of a car. The same comment works for the brakes, tires, steering components, etc, which all can cause accidents if they fail.
We trust all of those systems because their failure rates are extremely low. If we didn't trust car systems that could fail and cause an accident, we would never get in the car.
