The "old fashioned way" is with an impressioning sled to imprint the card's embossed numbers on a piece of carbon paper, along with the vendor's info which is on a plaque permanently attached to the sled. It's probably been 30 years since this was commonplace, and probably 7 years or so since I've had any cards that actually HAD embossed numbers (I think the last one was my corporate Amex), so this actually isn't even possible anymore. I do however vividly remember having breakfast once maybe 10 years ago when the payment network was down. The manager brought one of those sleds to the table and joked that he was the only one in the building who still knew how to use one.
This will absolutely happen, but is still a ways off. There are only a handful of stores I frequent where it's more convenient to use my phone than to tap a card. Hell one of our primary CCs doesn't even support mobile wallets (much to my chagrin). Kinda hard to enforce something you don't even allow.
