I have a feeling that the yoke steering was something Elon Musk insisted on just to be different, it looks totally stupid and offers less functionality than a traditional steering wheel.

They haven't, up until the introduction of the new interior. I assume this will go to all Model S's and not just the Plaid Model? I can't see how they could afford to split the production line given their thin margins.

Other cost cutting they have done:
-moved the hazard light button to the same PRNDL touch button
-Tesla S also no longer has adjustable shoulder belts ( a little insulting for such an expensive car)
-the headrests are cheaper design as well

It has everything to do with cost cutting..but its good cost cutting because they have made the design more attractive. Some of it reasonable
Other cost cutting they have done:
-moved the hazard light button to the same PRNDL touch button

The signals have now been rerouted to the steering wheel. The part is now integrated into one unit.
The design part is a different story. It’s the trade off of reducing the parts and in this case I think it looks great.
all the manufacturers do this. Toyota for example is now clustering buttons and switches into into one part unit. In many cases it looks cheap and unsightly…but in the Tesla case for the buttons it looks good and design wise it’s attractive. But the deletion of the adjustable seat belt anchors is disappointing

Unless you can literally show the cost of the various switch gear hardware and software you are guessing if there were savings or not.

removing adjustable lumbar support is definitely cost cutting! i don't know if that was done on this S too.

Tesla also removed the lighted red door lights. They now just have a red reflector but deleted completely from the rear doors. But added other stuff to the doors.
