If I'm using dual LCDs, could it be used to calibrate each of the LCDs or can it only do one?

yes u can calibrate each lcd independently using nvidia control panel. It allows you to save the settings into preference files. I custom tuned my samsung t260hd and dell lcd independently depending on what i'm doing (dvds, photo editing, internet browsing, etc.)
