Either offset will work- both are VERY conservative.
I'll bet you wouldn't even be able to tell the difference.

7.5 +40 will sit inboard almost as far as the OE wheels. Can you get anything wider?

For comparison, my brother has 20x9 +37 and 20x10.5 +41 on his '94 GS3 -
about 23mm closer to the fender than 7.5" +40. But we like 'em aggressive...

Get at least 8" wide rims. The stock rims are already 7.5" - since you are spending the money might as well add more rubber to the road.

Cool

That chart needs to be updated..It has been proven on this site by many members..Simply by what SocalSC4 posted proves my point..If your going to up the size of your wheel you should get something that is wider than factory like pianaman stated..

Updated to include what? Setups that can be mounted if you want to go neg camber? fender mods (shave, roll, flares)? stretched tires? For the most part, the doc is meant to help people who do NOT want to go to extremes but wanted some safe numbers to go with. It is meant to help the bulk of the people in the 80-20 rule. Besides, they are only sample numbers. Anyone can take it to any extremes they's like.
