I have the fat setup. My front offset is 38 and I'm dropped 1.9; I don't rub. I LOVE the ride. It's SO comfortable compared to the normal setup. If you haven't seen the fat setup in person, you need to. Honestly, it doesn't make them look that small. You can definatley tell they are 19's.
The 19" with big tire looks massive. When the tire shop pulled the tires out of stock, I was saying "You're gonna put that tire on my car?" Looked like a bus tire compared to every other tire in the shop.

Does anyone know about how many MPH the speedo is slower by going w/ the fat setup (245/40/19 and 275/35/19)? I'm assuming the odometer would be off the same (slower speed than what you are really going and lower mileage than what is actually registered)?

I've always thought the fat setup looked just fine - more drivable than the ordinary 19 or 20" setup. I used to have 19" Volks on a fat setup, lowered with apexi coilovers. Much improved handling with little degradation in ride quality...
I was lucky enough to get a ride in a GS with a similar setup before I decided to go that route. Here's a picture of Bitkahuna's car with 19" HRE's dropped on coilovers, one of the first cars on here with such a setup. Still looks classy to me:
