Yes, but are you able to hold a gear when you're in manual mode? Say you want to be in 3rd gear at 40mph and you floor the car. Does it stay in 3rd gear or does the tranny kick down to 2nd gear, despite being in e-shift

It will go to a lower gear. The manual mode and shifter only limits the highest gear the transmission can use.

Indeed, but you can't select 1st in e-shift, which is where most of the fun in keeping it in gear for me is anyway (gas into a turn at 15mph with first selected )

I used e-shift everyday....I like having more control than just D mode....I e-shift down and have the tranny slow the car down instead of always braking....then when i need a quick spurt of power....downshift and then gas it (main thing is to listen and feel the engine....you will know when its time to upshift to the next gear).

When I need a good uuuumph from a dead stop at a red light....slam it to 3rd gear, turn ON the PWR button, and turn OFF the VSC button....then gas it hard....hold on tight.....again listen and feel the engine....it will tell you when to upshift to 4th gear.
