The 1jz bolts into the SC chassis, so it will bolt into the GS chassis. Just like the 1uz bolts into the ls, gs, sc, chassis, they'll all swap.
Only problems are the driveshafts, and wiring.
That being said, why downgrade to upgrade?
2jzGTE's are getting cheaper, more power, and are tried and true.

good luck finding a 1jz vvti for anything less than $3k. you can find a non-vvti 1jz for about $1k but have fun with the wiring and some loss in functionality.
your cheapest alternative is to get a ge shortblock and do the work yourself. a proper gte swap is about $5-6k if you have someone else do it for you.
oh and the easiest swap for the 2gs is the 2jzgte vvti one. everything plugs right in and you can even use your ge ecu to control the engine with a piggyback.

you're really not going to save that much money and sourcing a 1jz-gte vvti might be more difficult than a 2jz, especially since that market is again. As far as the swap, it's been done before. Check out what some of the IS300 guys have done.
