i have 235/35 on a 9 up front and 245/35 on a 10 down back.
245/35 is a fairly obvious amount more stretch on the 10 than 235/35 on the 9. i am running nexens and looking at your front i think nexen stretch a bit more, but even so my 245/35 on 10 has rim sticking beyond the edge of the tyre.
doing the maths 235 works out to 9.25, but it still stretches. so 255 works out to 10.0 and 265 works out to 10.4.
so going by that i would think that 265/35 is probably more in the right direction as 255 might still be a tad too stretched for you. i dont think that either will give you identical amount of stretch but should be close.

Ok so after talking to a lot of different people about this, I'm starting to wonder whether I should stretch more to avoid rubbing? I'm hearing that with 265 in the rear I may still be rubbing too much? So should I maybe go with 225/35/19 in front and 255/35/19 in back? Now when I put on the Megan Racing Coilovers will the tire tilt in more due to camber, meaning I won't have to worry about rubbing as much?
This is my first set of rims, and my first set of coilovers so I'm kind of freaking out about this lol ...
Also this is a daily driver, would stretching the tire cause any problem over prolonged use?
Any other suggestins to avoid rubbing and get the perfect tire size?

the lower you go the more camber you will get naturally, and then you can adjust to get even more (but not less if you know what i mean).
im on page 2 of this so i cant see page 1 to see if you posted offsets and whether your guards are modded at all. if not you can remove the plastic trims and either get the guards professionally rolled a bit or shave them down.
otherwise if your offsets are a bit conservative then yes, the two ways to avoid rubbing without guard modding (And even with if you have aggressive rims) is Stretch & Camber.
if you dump it on coilover you will probably have -2 to -2.5 camber. I would say run the 255/35 up back on the 10 you should be fine. 235/35 up front will depend on the offset, i have 235/35 on a 9 with rolled guards and +27 offset and mine rubs a bit when turning full lock up and down driveways. but i dont care and live with it. i could increase camber or stretch more to avoid it, but since my car is daily and i drive rough roads i wanted less stretch up front so thats why i went 235/35.
rear is okay so i have 245/35 and no issue. Stretched tyres daily is fine provided theyre a brand that is okay with stretch (Falkens are no good) and provided you monitor your pressures regularly, like every week or 2. make sure theyre like 40-42psi.

Ok so I'm about to buy the tires either tonight or tomorrow. So would 235/35/19 Front and 255/35/19 rear be my best option? Especially since My fenders are not cut, shaved, or pulled? I will be dropping the car on Megan Racing Coilovers but I don't know how low I'll go yet, I just don't want rubbing issues like i have now ...

i would go 255-30(for the rear) it will stretch and lower your over all tire diameter. although it really depends on how low you go and what look you are trying to get. you can always shave the fender. i personally had 255-35 on a 10" wheel and it was to stretched for me (the lip was sticking out) so i went with a 275-30 and rolled the fenders.

I haven't been able to find the offset but I think I've decided on a size after taking it to a shop. They recommended me the 235/35/19 front and 265/30/19 rear, they also told me that after I drop the car on the Megans I won't even have to roll or shave the fenders and there will be NO rubbing !! Let's see if they're right, my fingers are crossed ...

One thing I'd be worried about and you seem to be aware of is that it will look dumb if you stretch too much without wheels aggressive enough to warrant that stretch. The stretched tires only look right if the wheels are pretty flush. Sounds like you're on the right track, hope they work out alright for you!
