Default wheel fitment question please help!

hi guys i want to introduce my self that im new to this forum. just got my 2001 gs300. i started with corollas (AE86) went to honda and switch back to toyota VIP this time!

i have a 18x9 +32 and 18x10+20 i want to know what size tires i should put on them
and how much rolling fender i need to do or the best way i can do. and im planning to run tein ss or megan racing coilovers. i hope to hear from you guys thank you!
