Default what tire size

i got a 18x8 40 offset rims what tire size should i get?

245/40 should be perfect.

what if i was planning on lowering it too will there be any stratches or etc.

To get any kind of tire stretch and be reasonable on an 8inch rim you will need to be 225/40 or smaller in size. But as said above that will do I would run 235/40 or 235/35 for better look on 8" wide rim.
