ok, 3min to take the door off. What about the door harness? remove and install... What about if the used door is not the same color? Where is the time to disassemble , sand, prep, and paint , for a door that isn't the same color? Even if the door was the same color you have to add time to align the panels. All in all you can't just add a used door and expect it to be perfect or the customer to be happy. Also warranty is always a huge issue on used parts that the body shop must in cure.
Warranty wise? Its the work you need to warranty. Parts are parts. If company a makes bad fenders that tend to rust out due to water sitting that isn't the body shops fault - but it falls on them. Which is why used parts are the only way to go for doors/quarters and such [fender are whatever], they will sit better than some aftermarket junk panels, and will be, well OEM made. Not made to oem spec, the tiniest variance in metal quality used yeilds an already ****tier finish.
