Radiator fan not turning on

Hey what’s up guys I’m starting to give up and I need some help to figure out why my radiator fan won’t turn on when needed.
Anyways when I first bought my 2002 gs43 I noticed when I turn the ignition to the ON position right before cranking the motor, the AC fan will automatically start running and constantly running while the other doesn’t fan doesn’t turn on at at.
so just last week I order a whole new cooling fan assembly. I installed it and when I turned the ignition both fans started running automatically full blast. I guess my old fan assembly was bad because the cooling fan never turned on, only the AC fan did.
I looked online what could be the problem for both fans to constantly be running at as soon at the ignition turns on and I read that the Cooling Temp sensor on the bottom of the radiator switches off and on the cooling fans. I bought a new sensor and now when I turn my ignition on or turn my car on both fans now stay off.
Only problem i em I have now is that the cooling fan turns on only when I turn on ac on. If I turn it off it’ll stay off even is the car starts getting better.
please help me I’ve been searching everywhere for answers YouTube and everything still no conclusion.

Do you have any leaks? Are u seeing pinkish white 'sludge' anywhere? Have you pressured test It?
Are you running pink/red coolant or straight water?
Are there any codes?
Is the water pump working?
How high has the gauge gone? Has it hit 3/4?
Do u have an obd2 to actually see the temp. number?

Normal behavior for this car:
When u turn on engine when car is cold,i.e. in the morning, NO fan turns on. When car get to a certain temp only one fan turns on. Even when cold, if u turn on the a/c, 1 fan will engage. If the car is HOT enough, both will.
The sensor you bought, is it OEM?
Do u know how to test the sensor?
