Hey,
Is there a way to replace the brittle wiring along the plug valley in a 2JZ? Mine is getting really brittle, I'd like to just replace all of it at once if possible.

Just find a good quality right gauge wire and replace as much as you can get to. Make sure to keep the right terminals in the right spot and do not mix the two wires up either on each of the 3 coils. You want to buy new connectors while you are here:

For a reference, I made my own 2jz GE coil pack wire harness but this was for my Supra. You can add braided sleeve if you want to go the extra mile:
