As with any car, test drive. Scan for codes. Pay attention to suspension noises. These need a lot of work if they aren't well maintained as they get higher mileage. Struts, bushings, ball joints etc. Look for leaks. In Cali it is the sellers responsibility to have a current smog on the car before selling. Make sure it passes smog. Be wary of "as is" sellers. It is a good idea not only to check for codes, but to check the emissions readiness monitors too. If you find for example that the cat monitor is not clear. That means the seller cleared the catalytic converter code and is trying to pass it off. Invest in a hand held scanner and practice using it before you go looking at cars.

Check fluid levels. Oil, antifreeze, power steering, brake and transmission. All should be uncontaminated. In my experience 2JZ's use oil, so proper level and clear of contamination is vital. Also from my experience if the transmission has been serviced regularly its good for at least 300,000 so again anything you can do see or inspect to ensure the tranny was serviced will save you headaches in the long run. I own 2 second gen 300's and enjoy them a lot.
