Actually, I was hoping for something that would level the car after a couple of heavy-set bottoms filled the rear seat (plus, maybe some stuff be put in the trunk). Generally, a car's *** sags awfully, in such cases.

"What self-leveling suspension does is provide a constant ride height regardless of load. That means when more people pile into a car, it doesn’t sink down until it looks like it could scrape the first layer of asphalt off the road. A self-leveling suspension provides for a more classy ride, and can also help save some kinds of wear on a vehicle."
Do any cars in the class of the GS have this option?

No. The air suspension on the LS is self-leveling, but the GS suspension is not self-leveling. The GS suspension is very good for a sports sedan though - coils with computer controlled shocks combined with a unique electro-mechanical stabilizer system. Very similar to what you will find on a BMW 5-series but not as well honed. It is striking that the GS460 and the E60 550i were the only V8 sports sedans that could pull 0.9G on the skidpad with factory tires and suspension.

like batman said, no. in order to have that, you need air suspension, for example ls460 with air, or the gx460/lx570.
all 3gs are on springs/shocks setup, there is no way to adjust the ride height
so if you stick a trunk full and 3 big guys in the back, the rear will sag
