What’s the opinion on 80-90 in the rear diff with this product?

Anything is better than the original gear oil with 100k miles on it LOL.
I used synthetic 75-90 in mine.

I did replace my differential fluid a week ago with Motul Gear 300 LS 75W90 since it was the only fluid available for me at the moment which had API GL5. And it works fine. My fuel consumption may have lowered a little, but I need to drive more to fully confirm it. I believe you will be fine with any fluid that has all the requirements stated in the manual.

I finally just did it with Mobil 1 gear oil
now for the brake pads,brake fluid change,serpentine belt ,
