Have a problem: In Winter: feels like I have to press brake deep for clamping force

Car: 2015 AWD GS350
After I got new brakes/calipers (summer 2022) and fluid (summer 2021), specifically in the winter (live in snowy cold climate), it feels like I have to press the brake pedal very deep to get full clamping force on the brakes. And then as soon I let the pedal go even a LITTLE bit, the brakes immediately release and the car starts moving.
Anybody know what the issue might be?

I guess I'll have to wait to do this for a couple years now until my next brake service. How much would a mechanic charge me to just walk in to bleed the brakes, with no fluid replacement; is that even possible? (p.s. I'm a total newb/fool, I know nothing about mechanical stuff)

This is a safety issue, you need to get it fixed.

It's been like 2years since my brake fluid flush, so I can't go back to them right now,. The thing is it feels fine in the summer right now. I only realized the brake pedal issue is bad during the winter.. like a few months ago..
