In 2013 GS 350 is there a way to change the map orientation so that whatever the direction (N,E,S,W) you are going the pointer is always moving up instead of left and right when traveling east or west. I was not able to find a way to change this in the settings.

In the upper left corner of your map screen you will see a small compass; click that.

Exactly. You have a choice of north up or track up.
