I'm looking at both the GS and Infiniti Q70. [standard GS 350 vs. standard Q70 ... not the F-sport vs S]
For those of you that considered the Infiniti (or any other make such as Audi/BMW which I may consider, but not the MB), why did you decide to go with the GS instead ??

Vs Q70:
Mostly badge and styling.
GS has moderately more handling and refinement.
Hi rear seat squab gives shorter rear occupants esp children, and excellent outward view, at the expense of adult rear headroom.
Small edge in performance, economy and reliability.
Last year:
GS sold 22k units - http://www.goodcarbadcar.net/2011/01...s-figures.html
Q70 sold 5k units - http://www.goodcarbadcar.net/2014/01...sa-canada.html
E Class has badge, some style, space esp rear foot space, E400 has in-line performance.
5 Series also has badge, some style, some space, and also 535i's in-line performance.
A6 has some badge, some style, some space, in-line performance, and AWD.
The Germans biggest advantage is in the badge and linear performance.
I use the word "some", to mean controversy, or arguably...

My wife's 2013 Infiniti JX35 has many tech features I don't have in my 2015 GS. I wanted the pre-collision and dynamic cruise control like our Infiniti, but there were none to be found.

The Q50 is way ahead of the Q70 tech wise. The Q70 still has Infinitis old tech suite, the Q50 is the new generation. Navigation and screen resolution is archaic, read outs and displays are archaic. The Q70 is a great looking car but it's nowhere near as polished or refined as the GS.

The Q50 isn't that great of a car. I had a couple as loaners when I had my G37S and I honestly wasn't that impressed with it. I did love the front styling of the Q50, but the infotainment system was very laggy and did crash on me and freeze up a couple of times. Not to mention it shows finger prints really badly.
The Q70 probably compairs better with the 3GS.

I had a Q50 as a rental a few months ago... the styling, comfort, tech, drivability, navi, etc etc etc was not even close to what I had with my GS350 FSport (when it was stock). when I looked up the retail price, I was left speechless.

I'm curious as to why you say the Infiniti technology is a full generation behind. I did not look at the Q70, but did seriously consider the Q50. I thought the tech on the Q50 was way ahead of the GS.

I didn't seriously consider the Q70 while shopping. The reasons why vary but here are the main reasons.
The Q70 has been mildly refreshed over the years, but at the end of the day it's the same M37 that was released back in 2010. I thought the exterior design hasn't aged well and overall look seems soft and bland. I didn't want to buy a car that already felt old.
The GS, aside from the engine, was new inside and out at the time. Loved the aggressive front end and the taillights. The interior felt very high quality and the seats were awesome. But I honestly wasn't sure about the mouse thingy, but I figured (hoped) I would eventually get used to it.

We considered it, as my father in-law owns one. Love the Q70 ride and handling, and it is certainly a more enjoyable and engaging car to drive. But it has a few downsides. Visibility isn't as good, as the hood can mask the corners. My wife wasn't a fan of this as she is fairly short. Additionally, GS has a superior AWD system for those who live in snow-prone climates The Q70 awd system cannot do a 50-50 torque split, so the GS is noticeably better in snowy/icy conditions.
GS also has better fuel economy, although not a major factor.
If you live in a warmer climate and like the fun ride, Q70 is a great bet
