Like the OP, I recently replaced the Turanzas on my '14 GS with the P7 A/S Plus (V speed rated).
I agree with the OP; the ride is smoother with less impact over sharp bumps. The ride is quieter, although new tires are almost always quieter compared to worn tires.
Handling is better with the P7s, with smoother turn-in into corners & bends, and overall grip is better than the Turanzas.
Whatever tire you use on the GS, get at least V speed rated tires.
