The GS is a bit odd. Initially, I tried the cigarette lighter which somehow has power that is constantly on even though you cannot use it when the car is off.
I finally got to the fuse for the heated steering wheel, which worked just fine. The power here shuts off after the car is turned off ... so it's perfect for the dash cam! No problems at all.

I understand Australian GS's are a clear minority so there may be a reason for this...but why does so much online advice point towards pulling apart the dash to wire in a dashcam? Only one piece has to be removed by pulling down the overhead light console.

Snap N Go makes cables for certain models that plugs into your OBDII port. Allows you the choice of have the camera shut off 5 minutes after leaving the vehicle or running continuously until the battery hits 12V. No need to remove ANY panels.

Nope, you can tuck behind panels all of the way down. Just bring it behind the top of the A pillar and tuck between the cover and rubber weather strip, then bring down to bottom of the dash. You may want to remove the kick panel to tuck away the extra or just zip tie it up under the dash.

From the passenger's footwell:
Heating steering wheel fuse is the safest (by taking an amount of stuff that would not work if something bad happens)
5A STRG HTR (LHD)
Heated Steering Wheel System (From Oct. 2015 Production)
Lane Departure Alert (LHD)
Lane Keeping Assist (From Oct. 2015 Production) (LHD)
Power outlets are just that - but are always on - the actual sockets are turned on/off via an aux relay. You'd need a cutoff device if you want these
15A FR P/OUTLET
Power Outlet
15A RR P/OUTLET
Power Outlet
If you're routing to driver's side fuses, the safest is:
10A FL S/HTR
Climate Control Seat
Seat Heater (Front)

PS. Coming from VAG vehicle (SuperB) I planed to go for an ACC fuse with an assumption that this powers up just Multimedia and stuff.
However in the GS, ACC is always active and actually powers up quite a lot of stuff (not these systems directly as such, but controlling/wakeup relays/boards/etc.):

I find that the parking mode has actually noticeably diminished the life of my Lexus OEM batteries!
I'm beginning to wish that I had of kept my Cellink V2 dedicated dashcam battery packs.
The nuisance with the battery packs is that when I get home, I must open my central console bin and switch it off, because I don't want to record inside my garage.
However, when I restart the car to drive somewhere, I must remember to open the central console bin again - to switch the battery pack on - so that it will both recharge, and the 12V lead acid battery will also power the dashcams while driving.
The advantage of the dedicated dashcam Lion battery packs is no damage to the car's PbSO4 battery, and literally hours and hours, eg up to 30 hours of park recording!
Thus, I wish Cellink had a timer to control the recording time.
More importantly, I wish Cellink had an auto on facility so that despite not park recording, it would still automatically recharge and record when driving...
