Is it really 800 bucks for the OEM GS350 battery from the dealer? Damn!
No. OEM is not the fancy Panasonic light weight battery. I think the fancy Panasonic is lithium ion. OEM still uses lead acid battery and at one point was made by Interstate.

What is this Panasonic light weight battery and where can u get one?
The original equipment battery installed in the GS 350 was the Panasonic Model# 20HR 70Ah CCA 580A D26 (JIS). The retail price of this battery was listed at over $1,000, but I doubt any owners replaced their battery with the same battery unless Lexus replaced it under full warranty. To my knowledge there was nothing special about the Panasonic battery that made it worth more than any other high-quality battery of similar design, which can be purchased for $150 or less.
The replacement battery that Lexus is installing in most customer's vehicles is made by Interstate and tagged with the proprietary Lexus logo and goes by the Model# 00544-MF240-575 (575CCA 130RC). It is an 84 Month battery with free exchange if it fails in 0 to 24 Months, and prorated at 50% of MSRP if it fails in 25 to 48 Months and 25% of MSRP if it fails in 49 to 84 Months. I think the cost for Lexus to replace your old battery with this replacement battery is around $120-$150.
Just hit 37k on my GS and had to replace the battery.
Didn't drive it for 24 hours, went to head into work and it was dead. Jumped it, ran to autozone and sure enough bad battery. That was $190 I could have spent elsewhere but, it is what it is.

The OEM Panasonic batteries have pure silver Ag anodes resulting in fewer "side" chemical reactions for longer life.
The aftermarket batteries claim to use pure silver anodes, but have more "impurities" in their silver Ag - resulting in more side chemical reactions which diminish longevity.
Hence, I often get 4-5 years out of my OEM batteries, but I usually only get 2+ years out of my aftermarket batteries.
Today I bought a Bosch 24-710BAGM ... dropped it in my 2015, seems to work fine. I did charge it a bit before starting the car though, it might have been sitting around awhile. I ditched the "battery coozie" that came on the original, too. The bracket holds it just fine without it. The panasonic was doing OK but I noticed it got a little soft this winter and had some sluggish starts... that's usually "the sign".
Anyone end up doing a deep cycle battery in their GS? Looking at options now, as mine doesn't seem to hold a charge any longer than a day or two. 2014 with just over 30k miles.

Mileage means practically nothing to how long a battery will last. Age is largely the deciding factor. Your battery, being 5-6 years old now, has served you well. Just replace it with another battery of the same specs and size.

Completely get it.
Any special procedure on swapping the battery such as memory keep-alive or anything like that, or just a straightforward swap on the GS?

I would definitely keep voltage on the system while swapping out the battery. If you don't know how, or don't have the tools to keep voltage on the system, I would recommend having the battery replaced by either Lexus or NTB (National Tire & Battery) or some other equally qualified shop. The price for a replacement battery from Lexus is very fair. Some people have had quirky things (MAF needed cleaning due to rough engine, emergency brake lock, etc.) happen when not maintaining voltage on the system, which cost some of them a towing charge, time and money to get sorted out.
