Default I find it strange

That for a performance car like a GSF, the eco mode will stick after you restart the engine. But the Sport and Sport+ mode will go back to normal mode after you restart the engine.

it is odd. Though I think there is a setting in the vehicle setup/in the infotainment to have it stick in sport and the desired tvd setting

The EPA/CAFE tests are run in what ever Drive Mode is defaulted on when the car
begins the drive cycle(s). If the car is tested in Sport Mode it will achieve somewhat
lower MPG results than in Normal. The manufactures definitely do not want to publish
those so they program the cars to default to Normal. The ECO drive mode will improve
on that by up to 7% particularly in the summer because of the effect on the A/C compressor.
Long story shortened, we can not get the car to default to Sport when restarting the car.

This is the most logical response I've seen. I did not think of that. If this was Lexus reasoning, this make sense as to why Lexus made it default to eco mode.

Nope. Been through all the menus. Nothing there to bring you back to where you were the last time you drove it. I hit four buttons every time I drive the GS F before exiting my driveway. Sport/TVD Slalom/Precollision off acknowledge/ASC off.

If I'm not mistaken, the drive mode customization menu is only available in 2017+ cars.

This is correct. 2016 does not have this. Page 297 of the owner's manual says clearly
Automatic deactivation of sport mode and customized mode
If the engine switch is turned off after driving in sport mode or customized mode, the drive mode will be changed to normal mode.

The drive mode customization still requires you to hit the mode selection down in order to go to customize mode. And also, the cluster gauge doesn’t change like to Sport mode.
I haven’t found a way and I don’t think there’s a way to make your last driving mode stick after you restart the engine except if you’re on Eco mode.
With the price of gas these days, maybe the Eco mode makes sense.
