I'm going to guess Edmunds tested sound of the HS250h at engine idle at cold start. Otherwise if the HS was on and vehicle was running in EV mode, it would be pretty silent.
The sound level ratings are not really accurate unless you compare two vehicles ON THE SAME DAY, esp. the 70 mph cruise rating. Wind noise will be different from day to day as the weather changes. So, an ES350 may be noisier than a Camry if the ES was tested on a windy day while the Camry was tested on a calm day. The only that you MAY compare is the noise at idle, but that is up in the air too if the day of testing was particularly windy. The best test is when you have two cars on the same day to compare.

My opinion is that the ES350 is the quieter of the two at speed. I testdrove the HS for a brief moment and was not impress with its solitude.
