We live in Welland and don't drive to the GTA much. Roads around here are pretty good. I want the same size winters and summers as my previous experience with my RX FSport and 2 different size wheels/tires drove me nuts with the difference in the speedometer. Affected how the cruise control works as well. We don't drive that much period, so for me, I prefer to keep it all the same.
Just speaking to the size difference:
If you downsize to 18" rims but use a set of 235/60R18 tires, the overall aspect ratio of the tires do not change from the stock tires and it will not affect your speedometer readings. Changes can only happen if the overall aspect ratio changes.
So for aspect ratio, 235/50R20 = 235/60R18 = 235/55R19

I second that. I have 18" winters on my RX and 20" for summers. Same diameter, same odometer. Both are off by about 3 km/h, below actual speed. This is well within the specification of the vehicle though.
My 20" has lots of curb rash and the 18' only couple (not sure how my daughter managed that though)..

This is my point, I don't want to live with any variation, I don't need to. Wife and I are only drivers. I do 95%. We put on about 12000 KMs/year. For us, sticking with the stock size is preferable.

Variation is not based on tire size, it is inherent design variation to ensure the manufacturers meet the rules. The shown speed can not be below your actual speed, hence, most likely, I my case any car I have owned, shows the speed by few km/h more than actual.
Even if you install 20" you have the same error as you install 18" same as the tires that came on the car...

What @toyotaman7 it's saying in plain English is your speedometer reading is always different from true suited (like you would get off you did an accurate reading off like a GPS module. It's just a design thing that every car has.

So to close the loop on this, we picked up the car yesterday and on the 1.5 hour long drive home, I observed that the speed display on Waze and the car were identical. This is the result I was looking for. Also, I really like these wheels and may try to sell the setup that came from the factory and replace them with the same set I have for summer, with summer tires of course. My preference is for shiny wheels, bucking the trend now to dark/black wheels.

Another option that I used on my 2021 Rav4 Prime with stock 19" wheels, was to downsize to 17" wheels and snow tires.
I bought these from Tire Rack with Blizzaks and TPMS as a package. They will clear the calipers, close, but they will fit. I have run this setup the last 2 winters in upstate NY, 10K miles with zero issues. You will have to reset the sensors via the info screen on the dash when you swap out your set in the spring and fall. You can find a lot of info over in the Rav4 World forums on this exact scenario.
I just traded in the Rav4 Prime for a fully loaded NX 350H Luxury and will be able to use the 17" wheel package. I verified with Lexus service, and called Tire Rack as well, Will need new lug nuts for the NX as the Toyota lugs that came with the wheel set will not work with the NX

The recommended wheel dimensions are 7.5x18, ET 35 (offset), center hole 60,1. Typical Toyota/ Lexus size. I fitted Continental Viking 7 Studless 235/60 R18 Nordic wintwr tyres and it more or less cured the excess noise problem I suffered with the 20" Bridgestone runflats.

Did you buy a wheel that was compatible with Toyotas with Lug nuts or a wheel that is Lug bolt compatible?
I wonder if anyone made a lug bolt that fits the old flat washer rims?
